Beth’s Bistro food review

By Kortni Wells, and Shelby Black

Beth’s Bistro is a new on-campus dining location. The Utah Statesman sent two writers to go eat some food and do a review. Here’s what they have to say.

Kortni’s Thoughts:

I’ve never been so impressed with a dining atmosphere on campus. The vibrant yellow seating, the natural light streaming in from the windows and the elementary school children playing outside made for a delightful experience unlike any other dining space on campus. I decided to try the chicken bacon burger and a peach smoothie. I loved the peach smoothie, and was happy to have a different option than all the other food places I’ve eaten at on campus. The chicken bacon burger was also well done. I loved the tender juiciness of the chicken and the crunch of the bacon. The soft bun added a delicate taste to the burger. The crispy lettuce, tomatoes, onions and pickle were the perfect additions. The chips and smoothie were just the right combination to the delicious burger. I loved the atmosphere of Beth’s and was thoroughly impressed with my first time visit. My meal was around $11, which was a little pricey, but worth it. I will surely be back to try more of their fruity smoothies. Definitely worth the walk across campus on a beautiful day for a fantastic food experience 10/10 would recommend.

Shelby’s Thoughts:

I ordered the bacon cheeseburger and raspberry smoothie. The raspberry smoothie was a vibrant pink color. It was super refreshing and sweet. It had more of a raspberry syrup taste, rather than fresh raspberries. I can live with that though. During a hot day on campus or after a sweaty workout this drink would be super refreshing. The bacon cheeseburger was also great. The bun was toasted to perfection. The burger itself was thin and then topped with crispy bacon and cheddar cheese. It came with lettuce, tomato, onion, and pickles to put on top. I like that the toppings came on the side so that you can pick and choose what you want. The meal also came with a bag of potato chips. It was definitely a step up from a burger from the Hub or the Marketplace, but not better than Mortys. It’s a good option on campus to get a different style of meal. My entire order came out to be around $10 which is a little more expensive than other on-campus options. I think it was worth the money though because you can’t get smoothies anywhere else on campus and the food is also grilled right in front of you which was nice. It was a fresh and tasty meal.

Overall experience:

All in all, Beth’s Bistro is a unique on campus dining location. It stands out from other places because of its smoothie options and all-day breakfast. Be aware that the grill closes at 3:00 pm, so all food items must be ordered before then. Beth’s Bistro is a good place for a mid-morning brunch or a place to study and embrace a quieter corner of campus, away from all the hustle and bustle.
